French Onion Soup

2 pounds Spanish onions
6 oz butter
1 tabls salt or to taste
Pinch, black pepper
Pinch, red pepper
Pinch, thyme
1/2 cup white wine
1/8 cup red wine
2 cups boiling water
1 rounded tsp beef soup base
1 rounded tsp chicken soup base
1 rounded tsp onion soup base
2 quarts water
Swiss cheese

Slice onions and saute in butter until soft and limp. Add seasonings, wines, soup bases and 2 cups boiling water. Simmer for two (2) hours. Add two (2) quarts water and simmer another hour. Add croutons to individual serving bowls and top with Swiss cheese; heat in oven for a few minutes until cheese melts.
