Chicken Fettuccine

1 (12 oz) pkg thin fettuccine noodles
1/2 cup butter
1/2 cup grated mozzarella cheese
1/2 cup whipping cream
2 cups cooked, cubed chicken
1/3 cup freshly grated parmesan cheese

Cook fettuccine as directed on package. Meanwhile, in small heavy saucepan, melt butter, add mozzarella cheese and cream. Cook over low heat until smooth and mixture thickens slightly. Drain noodles, place in a large bowl, add sauce and chicken and sprinkle with parmesan cheese. Serve immediately.

I double the sauce recipe, and serve with a toss salad, it is excellent. Ann
