Carrot Cake with Cream Cheese Icing

3 cups carrots, grated
2 cups flour
2 cups sugar
2 tsp baking soda
1/2 tsp salt
2 tsp cinnamon
4 eggs, well beaten
1 1/4 cup vegetable oil
1 tsp vanilla
1 cup raisins, or nuts, or a combination of both (optional)

Combine first 7 ingredients, stir in beaten eggs, oil and vanilla, mix well. Stir in raisins or nuts. Spoon batter into 3 greased and floured 9" cake pans or 1 9 x 13 pan. Bake in preheated 350 degree oven for 30 - 40 minutes or until done.

Frosting

1 pound powdered sugar
8 oz cream cheese, softened
1/2 cup butter, softened
1 tsp vanilla

Cream all ingredients together. Spread on cake while cake is still warm. Cake should be refrigerated.
